Most people also don't realize that deep dish also isn't the only style of "Chicago" pizza.  The square-cut "pub-style" pizza is extremely common here and is thought to have been invented here. When people are ordering a pizza, it's about as likely to be pub style as deep dish (or NY-style, etc.).  And it's tasty.

That said, deep dish remains very popular among Chicagoans with kids especially, as it's a great family meal.

I was introduced to both Malnati's and Pequod's via mgoblog. Threw this at my coworkers at Motorola in Chicago; that resulted in a...spirited debate regarding which one is superior.

I tried Pequod's first. Not bad at all! Would like to now try Malnati's.

To build on what Wendy is saying, Lou's crust definitely sets it a part. But I would also say that Lou's sauce is also a differentiator for me. Basically, Lou's just uses crushed whole tomatoes as opposed to a thick or complicated sauce. The simplicity of the tomatoes is actually quite great with all the other things going on.

I'm not sure what it is about Lou's, but it invariably triggers bad intestinal happenings for me. And the pizzeria was just far enough from the office to make it problematic to get back before those bad things started to happen.

Liked Edwardo's in Hyde Park until they baked a napkin into my crust one day. Still like Edwardo's but I haven't forgotten. And the Hyde Park location is gone.

I grew up on the North Shore. Back in the day, my parents loved Carmen's (where they were regularly served by one particular undergrad student at NU... Mike Greenberg, yes, Greenie), and obv Gino's East and Uno's/Due's deserve their accolades.  But Lou's is BY FAR the BEST.

The sausage alone... omg. I took my then-teen kids to Chicago a few years ago, they had their first in-restaurant experience with real pizza when we went to the Lou's near the restaurant. My daughter's face, the moment she bit into a sausage pie... should have been recorded. It's like finding the secret gold mine no one told you about.

he was my least favorite coach at U of M.  thought he was herb brooks but we called him 'hummingbird', because he had alligator jaws but a hummingbird rear-end, if you know what i mean.  total lightweight.  we hated him, he couldn't recruit, took us from a winning program (thanks coach farrell) to a losing one. giordano got canned after our senior season (i didn't play that year) and red was hired thereafter.  the rest, as they say, is history.

If Harbaugh was 10 years younger I think he'd probably be more open to going to a team that needed a full rebuild. But at this stage of his career, he's pushing 60, and in today's NFL, if you're not making the playoffs within two, maaaybe three years of getting hired, that's already grounds for termination. I mean hell, the Texans fired David Culley after just one year when he had a decimated roster with no bright spots whatsoever. The guy was set up to fail with those kind of expectations, and he was still fired anyway. 

I have to believe that whatever team he's serious about, it has to be the most complete team on the market. Which is why the Raiders make the most sense. Every other team out there is either a complete mess, like the Texans or the Giants, or they may have a few good pieces to work with and a QB, but still more or less need a complete rebuild around those guys, like the Jaguars or the Bears. 

If I'm Harbaugh, I have no interest in taking on a rebuild project at this stage of my career. Give me the team that's as close to turnkey as possible.

To be fair though, the 49ers in 2010 were 6-10. 8-8 the year before that and their best offensive player was Frank Gore who had fewer than 900 yards.  And Justin Fields is better than EVERYTHING those 49ers had at QB that year. 

If I was coaching, the Jets job would be interesting to me. The Bills are good, but they got figured out in the middle of the year. Pats are mortal again, and the Dolphins may be sliding into a trainwreck. Jets have 2 top 10 picks, #4 and #10 and $49.1 million in cap space for this season.

I don't think the Jets job is open right now, and even if it was, I wouldn't touch it with a 100 foot pole.

They've got holes everywhere on that roster, you don't really have much to go on that shows Zach Wilson is ready to be the guy in NY (some of that is his fault, but not all of it, he has no weapons), and on top of that, do you really want to deal with the NYC media? They make pressure at Michigan look like a mere thorn in your side. One bad day on the job and they are going to come out of the woodworks to crucify you, your staff, your wife, kids, everybody. They are among the most unforgiving people on the planet. 

I suppose the multiple top draft picks are enticing, but the Jets have been awful for years. They have no real building blocks on their roster right now to suggest they'll be ready to be contenders within the next 2-3 years, which is all the time that Harbaugh would be afforded in NY. They will take one look at his tenure in SF and expect those kind of results in that quick of time. 

You are right in that the AFC East looks different now that the Brady/Belichek combo is gone, but the Jets are so far behind the other three teams that its still going to take them a few years just to catch up.

The 49ers team Harbaugh took over had a pretty talented roster--especially on defense--that was underperforming. That's the kind of team you want to take over, where it's not a rebuild but more of a reorganization/re-motivation. Most of the pieces were already there, which is how he took them to the NFC championship game in year 1 (which is not a knock on Harbaugh--he did an amazing job--but simply to say that bad rosters don't get fixed overnight). You think any coach could have the Bears in the NFC championship game next year?

I see Tampa Bay as a pretty similar situation to those 49ers. They were 7-9 in 2019, underperforming with a pretty talented roster. Upgrade Jameis to Brady, add a few pieces, and poof, Super Bowl champions one year later. The Bears, Jets, Jags, Giants, etc. are not in any way similar. They suck, and are going to need serious rebuilding to become good...

Bingo.  Pizzeria Uno was founded by a guy from Texas.  Lou Malnati worked for him and split off to form his own place.  If you like "Chicago style", great.  Stealing a Steve Dolinsky line, tavern Chicago pizza is thin crust cut into squares so you can eat with one hand and drink beer with the other.  And that's how the vast majority of neighborhood/suburban joints serve it.

First time I tried Uno's, I thought that was representative of Chicago style and I said, fine, this is reasonably good and still meets the definition of "pizza." Then I learned real Chicago style was Giordano's, and it's basically just like eating a straight block of cheese with a little sauce and toppings. Jon Stewart was right when he made the case for NY style as totally superior.

There's a lot of bad pizza in NYC. There's a lot of terrific pizza. Part of knowing where to get a slice in NYC is knowing which slice places move fast enough that the slices are fresh. 

That's setting aside the range of places where you mainly order whole pies, which are substantially different.

Yea. I’ve heard that before, and every time I visit friends in NYC I ask them to take me to a place where the slice is fresh, like how I like to eat all my restaurant food. 100% of the time there isn’t a place. 
 

I’ve had fresher street food in Bangkok than any NYC slice pizza.
