O:T G.O.A.T Foods
With Big Ten Media Days next week and Fall camp after that, I’m guessing OT season is finally going to end so I wanted to squeeze in part 6 of my GOAT Series. Not sure if this will be last for this offseason or not.
What do you believe are the G.O.A.T Foods. Criteria is the following, 1. 1 item, not a meal. That’s it... it’s pretty simple.
Here are mine in order. Let’s do top 5.
1. Ice Cream Cake
2. Prime Rib... slow roasted and cooked medium rare to medium
3. French Onion Soup baked with cheese
4. Bacon wrapped onion rings
5. Pizza
Normally I'm a salt and pepper on steak only guy, but a few months ago I went to this restaurant and had their blue cheese steak. I LOVE blue cheese, but have never had it on steak, so I figured what the hell and ordered it (rare, of course). It was........amazing. Now I still prefer just salt and pepper on my steaks and will do that 9 times out of 10, but now I know blue cheese is really good on steaks, so there will be times I order it again.
Dude! Branch out!! Marinate them in any number of awesome recipes (or even store bought packages) overnight before cooking them. Teriyaki and honey is an old stand of mine. They absorb all that awesome flavor, get even more tender, and are mouth watering when they come off the grill. You'll never want the blandness of salt and pepper again...

While a good general rule, very fatty cuts like short ribs are actually better when they are closer to medium. They don't dry out at all, instead you get more of that fat to melt and it makes it juicier.
Ribs, and pork shoulders, should be cooked well past the normal 'well done' temps because the fat and cartilage melts down around 190. When that melts, good times are had by all!
Pork shoulder needs to reach 203 degrees internal or gtfo.
I smoke mine until 205* then cover it with foil for 60 min before shredding it. Also you just have to smoke a couple onions and peppers for the hour that the pork is resting. Sooooooo good

For real? I almost vomited the one time I had those.
Really? Being of middle eastern descent, if you have them homemade, they are amazing. Melt in your mouth. I don't like how most places serve them cold (or vegetarian). Gotta eat them warm.
The one I had was home made by a Greek woman straight from the islands. Everyone raved about them. I tried it. Had to spit it out because I gagged. Maybe it was the texture. I don't really know. What I do know is that I'll never have one again.

5. Shawarma (yea, I know, it's a bunch of foods but IDGAF it's my #5)
Medium rare is edible, but I'm a rare steak guy. Ribeye is my favorite cut.
My all-time favorite food is lasagna. I suppose my top-six (not including desserts/sweets because if I did, then cheesecake would be number one overall) would be lasagna, burger/fries combo, pizza, fried chicken and waffles, ribs, and chicken wings.
I know I give you a lot of shit on here, but we could definitely bond over some lasagna.
1 - 1,000. Tacos
- BBQ Ribs with Carolina style sauce
- Medium-rare ribeye steak
- smoked brisket with a Texas or KC style sauce
- Authentic Mexican carne asada tacos with a side of real queso sauce
- Shrimp scampi with bacon wrapped scallops
- BONUS: the Smoked Chicken Pizza from Noble Crusts in St. Petersburg FL
If you put sauce on your brisket you are doing it wrong.
I personally hate ice cream cake, but to each their own. In no particular order:
1) Pizza
2) Steak
3) Most any breakfast item that is not a pancake.
4) Short Ribs made in the Dutch Oven
5) Hummus
Honorable mention: BTB chimichangas, Cuban Sandwiches (it's got to come from FL, the crap you get in any other state is not the same), Goat Cheese Fritters, Gyros, anything with curry
Simple foods done well is what sticks in my memory.
Cheese enchiladas with the perfect brown sauce (think Texas)
Blimpy Burger fried veggies
tenderloin in debris sauce (think New Orleans)

Urban Meyer’s head on a platter (apple optional)
