You've basically nailed the essence of recruiting (while also making some false conclusions yourself). On the large scale, a greater percentage of 5-star recruits will be very succesful (apply fuzzy logic however you want to quantify "very succesful") than 4 star recruits.
Statistical misconceptions are made WAY too often when it comes to recruiting. Mostly due to anecdotal evidence, small sample sizes, and straw man logic. This is where you see "Glasgow was a GREAT player, and he was a walk-on, therefore, starzzzz are irrelevant). Yes. There are many good walk ons, many good 3 stars, many good 4 stars, many good 5 stars. Can you conclude that star ranking does not matter? No. statistics have shown that the mean performance level of 5 star recruits will be better than that of 4 stars, and same for 4 vs 3, etc...
This does not mean we should be only concerned with star level, for all the reasons you cited. Recruiting sites try and quantify something that is extremely difficult to quantify, and definitely cant capture all the heuristic variables present in evaluating the potential of a football recruit.
Conclusion: I cant fucking wait til football season.

While I am not technically a statistician, I am a quality engineer, so I work almost exclusively with statistics.
I would suggest that this type of situation is not appropriate for statistical analysis, due to all the moving parts and qualitative details.
Heuristic approaches would be better and it is clear that hiring a rockstar coach will improve recruiting. therefore: let's all get excited.
