I didn't catch these, a client gave them to me, Lake Erie walleye.   Pat the filets dry with a paper towel, roll them in corn starch & then coat them in beer batter made from Drakes.   Deep fried, of course.

I am sorry you ruined those fillets with beer batter woof..

 

Use shore lunch cajun recipe..  you don't get all the chunky beer batter when you fry it and it is nice and crispy.

But some people love the beer batter stuff, after 30+ years of deep frying walleye don't think i could go back to it.
