OT- SuperBowl Appetizers

Hey guys -- I'm sitting here in a seminar in Romulus, MI trying to pass the time.  With the super bowl coming up this weekend I want to get a head start on meal prep.  What are your go-to appetizers that you bust out for the game?

year I don't watch it, or least a good portion of it.  Don't really care who wins.  I know everybody wants to blow Tom Brady, but I'm pretty sick of New England winning it every year and I don't care for the Eagles either. So no dog in the fight or really care about the outcome.  Probably tune in some hoping for some funny commercials though.

but I had them a couple weeks ago.  Bob Evans original sausage, cream cheese and mix the two once the sausage is cooked through and lay out some crescent rolls and add the sausage/cream cheese mixture and bake....fan-fricken-tastic!

so pregame I'll probably just be finishing off a yellow cake with chocolate frosting. But for the main dish I'm thinking about making some chili, featuring the merciless peppers of quetzalacatenango.

For the kids, I put a layer of saltines on a baking pan, cover it in cheese and sprinkle some pepper and salt on top.  Bake it in the oven for 10 minutes and I have an instant, cheesy appetizer for the kids.

For the wings, I season them with a dry rub and marinate for 2 hours, depending on how much time I have.  Then I fry them in oil -- not flour -- and smoke them for 2 hours.

I smoke them for two hours if they're whole pieces, 30 minutes if they're wing dings, THEN I fry them for about a minute.  

With my beef ribs, I smoke them first for a few hours, then I finish them in the oven with a little bit of sauce for the wife.

Sorry for making you think I had a revolutionary way to smoking wings!

Wait a minute, we're still waiting for them to start excavating for the famed "Mall That Never Was" and now they are holding seminars in my city of residence? I think I may have missed a thing or two in all the fuss to develop the largely vacant Smith / Wick / Vining corridor. 

Or is that not what we're talking about?

dipped in Tartar Sauce or a Spicy Remoulade.   Same dipping sauces work great for mini-crab cakes or crab balls.  Football and crabs - thats what Maryland does....Wedding Crashers

I make chipotle salsa by boiling a couple of pounds of roma tomatoes, peeled garlic cloves, and sliced onion, a handful of dried chipotle peppers, and some salt and pepper in water to cover. Boil for about 30 - 45 minutes, and then put it into a blender when it's cool. You can make a layered dip with refried beans, cheese and the salsa for chips. Sometimes I grill or char the tomatoes under a broiler for a richer flavor.

This is my grandma's recipe but we make it multiple times a year! Especially for sporting events! 

Make a batch of garlic mashed potatos however you make them, there is no right or wrong way. 

Make a medium to large amount of hash brown casserole. This is made by frozen, out of the bag hash browns. ( Ore-ida or whatever ) 

You put a can of cheddar cheese soup and a can of cream of onion soup as well. You then mix it up, after mixed, add a layer of cheddar cheese and pop it in the oven for about 45 mins or until brown on top. Let cool for 15-20 after pulling it out of the oven. 

Now time for the oil, in a pan heat oil. Take an ice cream scooper and grab a half scoop of garlic mashed and half scoop hash brown cassorole. It should be nicely mashed together in the scooper, repeat that for as many as you want to make. 

Now drop those babies in the oil and watch them cook to perfection! You'll probably need about 3-6 minutes a piece. I usually use ranch to dip, my grandma use to make a thousand island type dip that I'm not sure how to make, I apologize.
