OT - your go to work lunch

So while earning my Podcast Endurance Badge from Sunday's podcast I was struck by Dave describing his go-to-weekday lunch as kale, red cabbage, carrots and dressing. However I realized that my go-to lunch during the week isn't much more exciting, and I eat it most days.  What's your bring-from-home go to lunch? do you get your whole day's worth of veggies like Dave?

I'm a sandwich-and-yogurt eater most weekdays.

Turkey (often flavored, today's was cajun), cheese (I'm not picky, today's was muenster), lettuce or spinach if I have it and various spicy mustards on wheat.

My go to yogurt is Chobani's peanut butter dream

I gotta get out of my rut... anyone make anything good?

Ha!  This used to be my go to until I got married (the 2nd time because my first wife's cooking sucked and she didn't like me doing it).

Now it is leftovers...and ironically, one main thing I love is something I hated as a kid: Tuna Noodle Casserole.  Not sure why, but hers is amazing.

Veggies to snack on, and a freshly blended juice usually kale/pineapple/mango/ginger/tumeric combo. I keep it light. Don’t worry I’m not all granola, I view squirrels as speed bumps, and am on my third chew by noon.

I got my first big boy post-college job today and it's a catered lunch with a chef every day and we're paid to eat! I get time and a half just for an hour lunch on top of a 40 hour work week.

WD, if you're out of college and the "job" is in your field ... it's not a job, it's the first position of your career.  Also, congrats on the nice hookup!  Few places have those types of benefits anymore (catered lunch etc.).

The best way to make cheesecorn is to take the cheese dust from a box of Kraft Mac&Cheese and put it on a bag of popcorn. Shake and enjoy.  

Lunch for me is 95% leftovers. For the most part, dinners are made with leftovers in mind because they make lunch that much easier.  If I do go out, I often hit the grocery store and make what I call "3 bean salad".  Chickpeas, kidney beans, edamame, wasabi peas, sunflower seeds, some bacon bits for smoke, croutons or sesame sticks for crunch.  Toss with a little red wine vinegar and no post lunch bloat/ sleepiness.

Quinoa, cucumbers, tomatoes, baby peppers (the ones that a little bit spicy), chickpeas, and homemade hummus. Layer it in a glass tupperware. At work I toss it all in a bowl and add a bit of olive oil and salt. Delicious.

Yep - I make a salad.  1/4 cabbage slaw 1/2 romaine chopped celery and carrots, tomatoes, sliced brussel sprouts, broccoli, cauliflower, 1/2 chicken breast cubed, with sliced toasted almonds and cranberries  add italian or balsamic vinagrette dressing  Sometimes avocado, sometimes pickled beets, sometimes radishes, cucumbers and bell peppers, sometimes sliced hardboiled eggs.

I've been pretty consistent since my heart attack.

Carrots and celery sticks with hummus and some fruit for a snack.

This isn't my go to lunch, but I do love taking a peanut butter and jelly sandwich, which gets placed in the fridge to chill. The proper way to feast on PB&J sandwiches is to absolutely load the two pieces of bread with jelly and peanut butter. The jelly should be more than the peanut butter, too. Then it must be chilled. When eating, you know it's enough jelly when it starts to drip from the sandwich.

 

There is absolutely no other way to make and eat one, which is a fact. If you don't do it like I, then you are doing it the wrong way. None of this peanut butter and banana nonsense. That is fine if you take a banana and put some peanut butter on it, but those two do not belong in a sandwich together. Again...this is a fact.

I can't do PB&J for lunch, I'll get hungry like two hours later. Also, it's much better fresh than stored.

That said, PB&J remains a good option on Saturdays or in the evenings if the family isn't sitting down. What J do you use? I need to make a run to Thunder Bay to acquire some more PC Blue Label twice the fruit, which has been the best stuff in the world for 25 years.
