OT: MGoRecipes for the New Year
So it's that time of year again. Between New Years Eve and New Years bowl games, a lot of people are scrambling to come up with something to bring to the party. Back in August, a few people posted recipes (LINK) for tailgaiting and whatnot. I think it's probably time to revisit a similar topic for everyone who is either hosting or bringing food to a New Years party.
I'd like to offer tortilla española (best translation is probably Spanish omlette). Easy, cheap, and tastes great either hot or cold. You can leave it sitting out all evening and it'll be just fine. Plus it's a nice change of pace from the pizza that you will have been consuming all day.
- 6 potatoes, peeled
- 1 large white or vidalia onion
- 6 eggs, beaten
- olive oil
- Salt
First off, slice the potatoes and onion into discs (the onion will obviously fall apart, but it doesn't really matter at all). Fry them both together in olive oil in a fry pan. You know they're done when they begin to smell delicious and you can cut them easily with the side of a fork. Take the potatoes and onions off the heat and put them in another fry pan (OIL the pan first!); they should form a layer about 0.75"-1" tall in the pan. Crack the eggs and pour them into the fry pan with the potatoes and onions. The potatoes and onions should be just about completely submerged in the egg. Add salt to taste and cook on low-medium heat until the sides of the omlette are golden brown and the top isn't excessively runny.
Here's where it gets very slightly tricky. Take the whole thing, invert it onto a plate, and slide the omlette back into the fry pan, now upside down. It shouldn't take that long to finish cooking.
Pat yourself on the back and revel in the fact that you are awesome. Serve either cut into small, 1.5" squares, or placed on a baguette. Makes great food for drinking with some classier beer.

You will need:
- Bacon (the thicker the better, IMO, ideally it should be pretty sturdy)
- Roquefort
- Pitted dates
- Cook bacon (oven is easiest)
- Spread cheese on bacon
- Chop dates, top bacon with dates
- ?

Better way to make that so people can eat it easily is to stuff the dates with the cheese, wrap them in bacon, making sure it doesn't overlap much, put a toothpick through it, and then cook in a saute pan turning to cook bacon completely.

Haha yes, beaten eggs.
I generally don't measure the proportions or anything; I just wing it. If there's too many potatoes and onions to fit in my skillet, I just eat them. I'd guess that, depending on your size of potatoes and onions, a 10-incher would probably be the right choice.
One more tip: make sure to use a full-flavored olive oil and enough salt, or it'll turn out a little bland. Not bad, but especially a few beers in, you're gonna want something sufficiently flavorful.

Sangría and tortilla española are quite a good combination, coincidentally.
Never really liked sangría, coincidentally. Not sure why, the taste has never really jived with me. As a cheap and incredibly easy alternative, just make calimochos, a combination of cheap red wine and Coke, miked 50/50.

I used the following recipe recently and it turned out really well. Just cut it back because it calls for 10 bottles of wine. Also thew in some chopped up apples.

Very simple and is a great appetizer or side dish:
-2 packs of polska kielbasa
-2 liter of Vernors
Slice kielbasa and add to large pot. Pour entire 2 liter of Vernors in pot. Boil for about an hour stirring occasionally until Vernors boils down to a syrup consistancy... BAM, candied kielbasa!

I usually make this as a side with Filet Mignon.
You'll need:
- 2-3 garlic cloves
- about 3 lbs of russet potatoes
- 1.25 cups heavy cream
- 2 cups grated Gruyere
- 2 cups grated Swiss
- 2 tablespoons each chopped chives and parsley
- salt
- pepper
- 3 tablespoons butter
Heat the oven to 375 F. chop the garlic and and rub the butter and garlic along the bottom of the baking dish (I use 13 in. x 9 in. typically for this). Slice the potatoes into thin slices (about 1/8 in.) - I leave the skin on them for added flavor. Spread a layer of slices on the bottom of the dish and sprinkle salt and pepper on top, then cover with some of the cream and, layer any leftover chopped garlic on as well. Also layer in about half the cheeses. Repeat the layering until the potatoes and cream are exhausted. Spread the balance of the cheeses on top and dot the top with the butter. Chop the chives and parsley and sprinkle them on top. Bake for about an hour or until the top layer is brown and the cream has been absorbed.

My wife used to make this spinach dip all the time as her go-to recipe for parties. It's the one that comes on the back of Knorr vegetable soup packs:
1 (10 ounce) package baby spinach, chopped or 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 (16 ounce) container sour cream
1 cup mayonnaise
1 (8 ounce) package vegetable soup mix
1 (8 ounce) can water chestnuts, drained and chopped (optional)
3 green onions, chopped (optional)
Directions:

Combine all ingredients in a bowl.

Cover and chill in the refrigerator about 2 hours.

Serve with your favorite dippers to your favorite people.

A new serving idea: Hollow out cucumber slices and cherry tomatoes.

Fill vegetables with spinach dip and garnish with a sprig of dill.

MAKES 4 cups dip.
My wife would buy a round loaf of pumpernickel bread, scoop out the middle to make a bowl, and fill the bowl with the dip, saving the scooped out bits of bread to use as dippers. I've seen a newer version of this that replaces the sour cream with Greek yogurt. The ladies should really like this version because it makes all the ugly guys at the party look like John Stamos.

Crockpot meatballs...really easy and fun to take to a party.
Frozen meatballs as many as you can fit into the crockpot and cover with Buffalo Wild Wings Asian Zing sauce (about one bottle for ever two pounds of meatballs).
Simmer for a couple hours on low.

flour tortillas
refried beans
cheese
lime corn chips
taco sauce (either your left over TacoBell or Ortega in glass bottle)
generously oil pan
Smear the beans on torillas; add cheese; add crushed lime corn chips; add taco sauce; roll up nice and snug; lay in hot oil; flip when slightly brown; repeat. Take two Tums or other antacid, drink heavily. This will set you free.

I tried this receipe last year for NYE and it was insanely easy and was a hit at the party.
Ingredients
- 8 ounces cream cheese
- 1/2 cup finely chopped celery
- 1/2 cup hot sauce (recommended: Frank's)
- 1 rotisserie chicken, shredded
- 1 cup crumbled blue cheese
- Crackers, bread or carrot sticks, for serving
Directions
Preheat the oven to 425 degrees F.
In a medium saucepan over moderate heat, melt the cream cheese until smooth, about 3 minutes. Add the celery, hot sauce and chicken and mix well. Transfer the mixture to a 9-inch pie plate and sprinkle the crumbled blue cheese on top. Bake until hot and bubbly, about 25 minutes. Serve with crackers, bread or carrot sticks. (I did it with toritlla chips and carrots)
