Love OF 1920. Decided to go scotch tonight and got a bottle of Balvenie Caribbean cask. Listening to the lovely sounds of my neighbor's pressure washer.
Cracked open a bottle of Lagavulin Offerman. Very interesting and quite tasty. Also grilled some home made carne asadas.
Definitely not utilizing the pressure washer though.
Man, sounds good. Islay goes so well with grilled meat.

I'm really enjoying it myself. First time I've had OF 1920. It was highly recommended by several on the blog, probably you were one of them. Balvenie CC is one of my favorite scotches. A good friend had a bottle a couple years ago and man was it good. Sorry about your neighbor, hopefully he stops soon or the scotch lessens the noise.
For some reason 1920 ends up in my flask most often when I go fishing. Which is why the pressure washer isn't an issue. Going to Florida for a week starting tomorrow and all the fishing gear is packed up and ready to go.
I'm enjoying the Balvenie for sure. Will have to moderate since no way in hell my wife is driving tomorrow.

The family is aware. We won't know her schedule until later in the summer but I'll be going regardless. Brother in law likely in tow if she isn't.
It's a trip to the gulf with a bunch of family and kids, so I'm planning on staying close and mostly pier and surf fishing. The catch varies, but we'll be going for whiting, pompano, trout, drum, Spanish macks and maybe king Mack if we get get enough pier time. Shark and cobia as well.
I'm going to try something new this trip and take a drone with a downrigger on it to try and drop my bait out as far as it'll go. It'll either be awesome or an expensive lesson.

Oh shit how does the Caribbean cask compare to the standard Balvenie Double Wood? That's a recent favorite and I've seen the Caribbean cask and have been intrigued for a while.
I've only had the doublewood once at a restaurant and it tasted very honey sweet, but I was eating a massive oily and salty grilled tuna cheek. Likely a bad pairing. It's a well liked scotch.
Ah, fair, it is a sweeter one being aged in those sherry casks. Sounds like the Carribbean is not super sweet?
It's sweet, which is what I usually get from speysides, but I tend to like whiskey finished in wine barrels or rum in this instance. Kind of like glenmorangie is fine, but their finished scotch is there exact same stuff just she'd a couple more years in other barrels. Had the same character of the original with more flavors to enjoy. But I prefer highland and islay scotches unfinished. They seem to stand on their own better.
I haven't had double wood in years.
At my age, it's a minor miracle if I can get single wood.

Any MgoBrethren out there used an Anova? I was a little skeptical about water based cooking but we tried it out tonight and wow it was good. We made steaks in it tonight and while it wasn’t the best steak I ever had, it’s up there with one of the best.
Also made some twice baked potatoes and now killing a bottle of Pinot noir to myself. Mrs. Perkis and I are expecting our first child in seven weeks and once we get inside five, I’m shutting down drinking anything more than one glass, maybe two, on a weekend night. I’ve been going sober most every weeknight for the past two years anyway. Anywho, I’ve got about two weeks of guilt free drinking left so I’m going to make the most of it.

Thank you my friend! My wife is usually sleeping at least 8-9 hours a night since she’s had to start working from home, and now that her students are out for the summer it’s getting closer to 10. She needs all the sleep she can get between now and mid July.
I’m almost always up by 5:45-6 no matter what I do. I can fall asleep at 9pm or 2am, but it doesn’t matter. I’m up early anyway. Either way, I’d rather the Mrs. get the sleep over me.

i often cook using reverse sear on the smoker, which is kind of a redneck Sous Vide. Always comes out dynamite.

Yes, big fan of sous vide cooking. If you like your steaks rare, it is a wonderful tool. (It works for any temperature of course — I’m just talking to those who like rare, because they are better people and deserve the best advice.)
I’ve never met anyone who cares for their steak to be rare. The most I’ve seen is medium rare. Although if you’re a fan of goodfellas, that makes you an aristocrat, so maybe what I know amounts to diddly squat.
if/when we meet, you will no longer be able to make that statement re: rare steak. one qualification: in england, their idea of 'rare' is that it got warmed more than room temperature. so not that rare.
I actually order my filet extra rare at a good steakhouse. Now if you’re talking NY strip, I like more of a rare/med rare.
Love our Anova. With steaks or roast I usually have the grill on full blast and sear them after taking them out of the water.
Did sous vide burgers today, finished them over charcoal. Turned out pretty good.
I use the Anova for everything from steaks to turkey.
The trick with steak is to remove it from the bag, dry it thoroughly, apply your grilling seasonings, then sear it in a screaming hot pan. I used to use a Bernz-O-Matic MAP gas torch to help things along but now I use a Lodge 17” skillet over a 200K BTU propane burner.
Best turkey you’ll ever have too, if you or your guests can get used to it looking a shade pink.
