MGoMerry Christmas...what's on your menu today?

Merry Christmas MGoEveryone!

So what are you all cooking or doing for Christmas dinner today?

We're doing something different.  We moved away from turkey for Christmas a few years ago.  We've done ham one year and beef Wellington for a few years.

This year the MGoWife said she wasn't cooking anything so I decided it would be Korean barbeque for Christmas.  The first time I had was in Uijeongbu back in 1983 when I was a freshly minted 2nd Lieutenant stationed in South Korea.  After getting married I would occasionally recreate what I remembered it was like.

So for today, the beef and pork have been marinating for a week in the fridge.  We have kimchi, kkakdugi, diced raw garlic, bean sprout, rice, lettuce, bean sprouts and a couple of other Korean side dishes.  All 3 MGoSons will be here for the feast.

I know there is ham-a very good Virginia ham...in more ways than one-since we have, in fact, made the trek from KS to VA. My wife has made a broccoli salad. I've got dinner rolls raising, yesterday I made apple, blueberry, pecan and key lime pie...and homemade ice cream to go with the pie.

Wish us luck on the "moderation" thing.

Prime rib, city chicken, pierogi, kielbasa, and probably some sort of vegetable that no one cares about.

For dessert a homemade apple pie and a 7 sisters cake from New Palace Bakery.

First Christmas in South Florida…drinking beer  in Lauderdale by The Sea today and then will be searing a Brush Creek Ranch Tomahawk steak later this evening for the family.

We spent our last pre-COVID Christmas week there. We had come across it on a previous trip and, it was so pretty we decided to make it our destination. We're still not traveling (well, one trip to A2 to see our daughter, who has a post-doc fellowship), but if things have opened up next year, we'll be back. We loved a Cuban restaurant named Mario's Catalina. If you go, say hi to Mario. Maybe he'll give you a bottle of wine when you leave, as he did for us.

So many great restaurants in that area, will definitely check it out next time we go for dinner over there. I’m currently living in Plantation but our Canadian friends have a vacation home in Lauderdale, they haven’t been able to visit for obvious reasons so we pop over to check in on it.

Appreciate the recommendation.

We’ll be pretty simple today, since it’s just my mate and me.  Spatchcocked Chicken in Adobo sauce, mashed spuds to sop up the extra sauce and a cauliflower wreath.  Think of a smaller Bundt cake, but consisting of cauliflower, leeks, and ricotta wrapped in pastry dough.  Dessert will be blueberry pie with ice cream.  Yum.

Running about 4 hours behind but the blackstone is fired up and breakfast / now lunch is going..  in a few I'll be smoking prime rib ( Malcolm Reed style ) with home made mash potatoes. 

This 50 degree weather in central Indiana sure is nice

Made cole slaw and cheese grits casserole for family gathering that I can't attend due to cold.

Family is getting together at a beach house. Non-traditional seafood meal. Upper 60s with mostly blue skies today.

I will make some oyster stew for me later.

R&R for me.

Smoked Prime Roast over hickory that was soaked in bourbon. Served with caramelized vadalia onions, buttered mushrooms, and twice baked potato casserole.

Lebanese Feast served on the 24th, usually much bigger gathering, but not this year:

4 different dips, Hummus, Baba Ghannojus, Toum (garlic whip), Labne

2 different cheeses, Middle Eastern

chopped veggies

2 different salads, supreme citrus with olives and a date palm with feta and spinach

Housea, Hushwa, Riz y Yukni, Djaj Mishwa.

Didn't serve Kibbee Nayee this year or lamb chops with spices or the Spanikopita, but normally would have.

Still was a big hit.

Clam chowder, salad, and meatballs last night.

Bacon egg quiche, sausage egg casserole, and cinnamon buns this morning.

Turkey and stuffing tonight.

58 degrees in Kansas City so I am firing up the Rec-Teq and getting a 600 degree reverse sear on some bone-in rib eyes and double baked potatoes.  

While my wife wears a Ryan Day mask in lingerie.

Per tradition, I made cinnamon rolls for my wife for breakfast. Family is spread around the country, and I'm proud to say that each of my kids made cinnamon rolls for their spouses, too. Should get us through until dinner, which will be a beef standing rib roast, with creamy mashed potatoes, homemade dinner rolls, roasted Brussels sprouts, and green beans. For dessert, some of the 60 dozen cookies that I baked in the past two weeks. There will be plenty of food for the three of us: me, my wife, and my 92-year-old mother-in-law.

I slow roasted a 7lb brisket yesterday with onions, carrots & parsnips. Dinner tonight will be brisket, mashed potatoes, and garlic sauteed green beans. Pumpkin pie later. Scotch late in the evening in front of the fire. Either the Oban or the Lagavulin.

Basic turkey dinner with the turkey cooked sous vide. I used to go balls-out but the in-laws would complain so <shrug>  No point in buying a prime dry aged prime rib from Lobel’s if people want it cooked well done.

I butcher the bird first. 

1. Remove the wings and freeze for next year’s gravy. 

2. Remove the drumsticks.  

3. Remove all skin in the biggest pieces possible. 

4. Remove the thigh and debone. 

5. Remove the breasts. 

You can use the carcass for gravy but since that has long been made I usually just discard it. 

Bag the drumsticks, thighs, and breasts up separately with S&P, olive oil, sage, rosemary, and thyme. 

The night before I drop the drumsticks and thighs and give them 8 hours at 151º. 

Next morning I refrigerate the drumsticks and thighs and drop the breasts at 145º for 6 hours. You can go lower longer (I like 138º) but it can look a bit pinky, although safe to eat  

As serving time approaches reintroduce the dark meat to warm. 

Place that reserved skin, seasoned, between two hotel pans and roast at 400º for 30-45 minutes to make the best part of the meal. Cut it into chips and stick them in the mashed potatoes (or puréed cauliflower).

Half an hour prior to serving roast the drumsticks at 450º until crispy. 

Retrieve the bags, remove the herbs, and slice. Moist and herbaceous.

Garlic and red pepper green beans

Cheese and garlic drop biscuits

For dessert: brownie and vanilla ice cream with Buffalo Trace Bourbon Cream poured on top.

Breakfast blueberry waffles l, eggs and bacon.

My wife has made lasagna for Christmas the last 10 years or so.  Yesterday she spent most of the day making the sauce from scratch.

Also this year she added a side of glazed Brussel sprouts that were delicious. 

Desert my daughter made mini cheesecakes with choice of blueberry or strawberry topping.

Red cabbage w/ green apples, green onion and some white wine vinegar, slow cooking in a crockpot with pork chops.

Not our usual Christmas dinner but when they leave it up to me they get pork. :)

My traditional prime rib recipe that has been used for a great many years and still turns heads with the delicious aroma it spreads throughout the house.

Add to that the chocolate yule log (which basically is a giant ho-ho) that I have learned to make.

Nobody goes hungry in our house.

I used to work at a pastry shop in my younger years and was the point person on Yule Logs (Buche de Noel in French). I have rolled, frosted and decorated many of them with chocolate ganache and meringue mushrooms. My at-home one is much easier --  just a chocolate sponge cake rolled and filled with whipped cream, dusted with powder sugar and served with chocolate sauce. I also refer to it as the Giant Hoho.

Meatballs with bbq sauce and chili seasoning in a crockpot. Super easy for potlucks or family meals. A familiar/common item in meatballs, but the seasoning and sauce makes it just different enough to be special!

Only have our youngest daughter home for Christmas so we kept it simple. Ham, mashed taters with gravy, green beans, mac n cheese (we live in the south, its a tradition!), baked beans, dressing and rolls. One year I may venture into doing steaks or BBQ perhaps, but not this year.

Doing our traditional family Christmas dinner:  standing rib roast and Yorkshire pudding.  My mom started this a long time ago and it’s too good to not enjoy once a year.

The Korean dinner sounds delicious.

Sausage gravy and biscuits with eggs and bacon for breakfast.  Beer cheese dip and bacon wrapped crab for lunch, rib roast with roasted veggies for dinner.  All while watching us beating Ohio then Iowa then Ohio then Iowa, hopefully I can add a couple more to the collection soon.
