They have display cases for all the teams with various memorabilia on loan from the hall of fame. Jerseys, helmets, cleats, etc. It's a new display probably associated with the lead up to the super bowl.

Don't recall seeing his. Less than half the cases had draft cards. Others included Cam Newton, Matthew Stafford, Andrew Luck, and Ryan Tannehill

There are 3 current NFL players from the Woodson draft...Obviously Peyton manning. Can anyone guess the third person?

As I recall, nobody took a QB in the 2000 draft until Chad Pennington at #18, and then I think you didn't see another one until the third round - Hofstra's own Giovanni Carmazzi, if I remember correctly. That was a very interesting draft for QBs (Chris Redman, Tee Martin, etc...), but obviously the Patriots were the ones to strike gold that particular year.
