a lot cheaper. I think I paid about $15-$17 per dozen this year. Which is way too much, but today is like black friday for the Polish bakeries around here. Take away fat Tuesday and 3/4 of them would go out of business.

There are actually a lot of culinary traditions associated with this day. In Poland it's the paczi. On the bayou it's the king cake. And in England it's pancakes, oddly.

British pancakes are different than crepes - they're doughier. At least, the ones I had over there were.
There is a big crepe-eating day around this time in France, but it's not Mardi Gras but Candlemas (February 2).

Every Fat Tuesday, my work buys a ton of paczkis for the office (this year they even got a box of prune filled ones...gross!). Needless to say, I've downed two so far (chocolate and strawberry) and am already starting to feel the ill-effects of that poor decision. That won't stop me though. It ain't paczki day until I've had at least 4!

I grew up thinking they were gross, but then I tried prune-filled pierogi and found I was a convert.
I'm also a fan of pickled herring now, as well (but not cream-style - the version my cousin lovingly renamed "sludge").

In Poland this is known as Śledzik (literally Herring Night) and you'll find the traditional pickled herring washed down with shots of vodka in many homes, bars and restaurants.

The Polish word for creamed, pickled herring is "sledzie" (pronounced "sledj-ye", or approximately so). Thus, my cousin appropriated the term "sludge". It fit.

Yes. Prune and Rosehip. Rosehip is much harder to find.
If you want to be real traditional (500 years ago), the filling would be pork fat.
