Apocalypse Now, Ride of the Valkyries
Aside from it already being on Broadway, my choice is The Lion King. My childhood demands this.
Raiders of the Lost Ark with the National Symphony Orchestra performing the soundtrack was amazing. Three others I think would be spectacular would be Jurassic Park, Gladiator, and Inception. Inception does have a lot of electronic work in the soundtrack so that one might be too hard to do.

I liked the movie when I was younger, but i haven't seen it in quite some time. It probably doesn't stand the test of time.
