Preparation
Season flour with salt and pepper. Flour the osso buco, rabbit, and venison.
Brown each piece on both sides, about 2 minutes per side. Remove from oil and set aside. Brown the sausage and meatballs for about 2 minutes. Remove from oil and set aside. Add the onions, carrots, celery, garlic, and pepper flakes. Saut6 for 5 to 7 minutes or until brown. To this add the wine, herbs, tomatoes, and all of the meats and their juices. Reduce heat to simmer and cook for 41/2 hours. With a slotted spoon, remove all meat and bones. Remove meat from bones. Set aside. Return bones to sauce and reduce at high heat for about 1/2 hour. Skin all fat from the top of sauce. Strain sauce through a sieve and puree with stick blender. Return meat to sauce and season with salt and pepper. When polenta is arranged on table, ladle just enough sauce to cover the polenta. Arrange meat evenly over polenta and pour remaining sauce into bowl to serve on the side. Also have some extra Parmesan on hand.
Yield
You need to remove the bits of asphalt, road tar, glass, and cigarette butts from the road kill. Otherwise the ragout is sorta crunchy.

me and the 4 oldest boys skinned it in the barn in 15 below temp and let it hang for a few days. butchered it up and it is excellent nutrition and the price was right - nada.
