A few months back, I was offered a new job that I couldn’t pass up. My weekend hobby has turned into a full time job for the largest BBQ retail store in the US. I organize and teach BBQ classes every Saturday with some of the greatest pit masters and chefs in the country. It is a dream come true and I couldn’t be happier. I am constantly amazed with new recipes and techniques and how these guys make it look so easy.

In our most recent class, Chris Gentry of Gentry’s BBQ was in town and taught a great class. He did a CUBAN Pork Loin, smoked chicken and my new favorite dessert. He made Pumpkin Chocolate Chip cookies that blew me away. Not only were they ridiculously tasty, but they were the easiest thing I have ever cooked. 3 ingredient cookies on the grill….YES PLEASE. You can make these on the grill or in the oven. Trust me, these pillows of goodness will be a hit at your next holiday gathering.

Ingredients:

  • Carrot Cake Mix (1 BOX)
  • Canned Pumpkin
  • Chocolate Chips
  • Powdered sugar (Optional)

Directions:

Heat your grill of oven up to 350 degrees. Do not use any wood as we do not want any smoke flavoring on the finished cookie. Don’t forget your cookie making beer. I went with Franconia Fallin’ Bock. This is a local beer and is fantastic.

As the grill is heating up, add your 3 ingredients to a mixing bowl. Add your 1 can of pumpkin, carrot cake mix and chocolate chips to your favorite mixing bowl. Do not add the eggs, water and oil to the mix as the carrot cake mix instructs. Add only the dry mix.

Add as many chocolate chips as you’d like. I went with the whole bag. (Minus a few that fell into my mouth) Once mixed, spoon them onto your favorite cookie tray. You can use a pizza stone with parchment paper if you’re using a grill. These only take about 20 minutes to cook.

The class labeled these as PILLOWS of GREATNESS. Half of the class admitted that they are not fans of pumpkin, but that they loved these. I am a huge fan of pumpkin and anything sweet, so I was more than happy with these.

I took it upon myself to add a little powdered sugar at the end, but only to add some color to the photos. This is not necessary, but does add a little sweetness. You can’t go wrong with powdered sugar, right?

These went super fast and will be on the Thanksgiving menu for sure. Maybe I will try dunking them in milk next time around. I wouldn’t recommend dipping them in hummus. Save that for the chips and the pretzel crisps. As always, Lantana has an ever growing line of tasty hummus choices and can’t be beat. I have loved every flavor they offer. This 3 pepper is still my favorite.

I baked them for 22 minutes at 350. 

I goofed making them.  We had large can of pumpkin mix and I put a little too much in, so I added a little flour and oatmeal.  

Turned out great.  Ate some.  Froze some. 

Going to try chocolate cake mix with pumpkin filling next time...plus choco chips of course.

Used a box of Chocolate/fudge cake mix and pumpkin pie mix plus bag of choco chips.  So easy. Baked 22 minutes at 350.

Wife liked the slight taste of spice from pumpkin with choco mix and choco chips.

I really liked the cookies I am going to make them, but I will use the organic chocolate that I love I buy it in this shop it is very good, especially that you decide the percentage of cocoa you want to buy for your needs if you need them to have more flavor or less on everything that is an organic chocolate with a good presentation
