MGoBBQ: Leftover Thanksgiving Fattie Comment Count

If your family is anything like mine, you cooked way too much and have a enough leftovers to feed a BIG HOUSE crowd several times over. We had fried turkey, smoked turkey, roasted turkey and I think I even saw a JIVE turkey running around somewhere.

I wanted to come up with something different for the leftovers. Sure, we can make the standard hot turkey sandwich tomorrow, but this is THE GAME. I think this one deserves a little extra, don’t you? I decided on the Thanksgiving Day FATTIE. These are legal now, right? You may remember the breakfast fattie from a few seasons back. It’s basically a stuffed sausage roll that you smoke (Or toss in the oven). Here is the link to the last fattie we smoked for the opener.

Ingredients:

  • 1 LB roll of your favorite ground sausage. (SAGE works great)
  • Turkey
  • Stuffing
  • Cranberries (Optional)
  • Gravy
  • Salt/Pepper/Thyme/Rosemary COMBO
  • Maple Syrup

Directions:

Fire the grill or smoker up to 250 degrees. I like using FOGO charcoal as the family are all Michigan Alums and they put out a great product. It burns clean and hot!

As the charcoal is heating up, assemble your leftovers. This can also be done a few days ahead and stored in the fridge. I was out of cranberries, so we left them out. They would be a great addition to this recipe.

Place your sausage roll in a gallon zip lock baggie. Leave the top open so air can escape.

Flatten the sausage with your hands or a rolling pin. It will take up about 75% of the bag.

Take a pair of scissors or a razor blade and slice along the sides to release the sausage. Place your leftover ingredients on top.

Don’t forget the gravy. This will all warm together when its on the smoker and form the perfect bite. MMMmmmmmm…….. If you like sausage inside your stuffing, you’ll love your stuffing inside your sausage even more.

Green bean casserole may even be good in this one. Once the ingredients are added, start rolling and forming your fattie. Use the bag to help.

Once you have it formed, place in clear plastic wrap and seal tight. Place in the fridge for at least an hour to help form the perfect fattie shape. Roll those ends SUPER tight.

After an hour, remove from the plastic wrap and season with salt, pepper, thyme, rosemary and any other Thanksgiving seasoning you want to.

Place on the smoker or grill or even in the oven at 250 degrees, I went with cherry wood on this one.

By the way, this is my new smoker and I couldn’t be happier with it. It’s the Primo XL and is my new favorite Kamado style cooker. Not only does it cook like a dream but it’s also made in the good ol’ USA.

As my fattie was heating up, I grabbed some other leftovers from the GO BLUE BBQ fridge. We made some ridiculous Smoked Potato Salad using the Lantana Hummus. We replaced some of the mayo/mustard combo with the Sriracha Carrott Hummus. Holy Cow, this is my new GO TO Potato Salad.

After about 60 mins, the color on that fattie starts to darken and the grease from the sausage chub starts to shine.

This one is done when it hits 165 internal. Don’t worry about overcooking it as the fattie is very forgiving. Once mine hit 160 degrees, I added a little maple syrup to the exterior. You don’t have to but I wanted some sweetness in mine. As I mentioned, we were out of cranberries. Remove at 165 internal and let rest for 15 mins.

Time to enjoy that fattie. Slice in 1 inch rolls and enjoy.

This would be great served on a biscuit with cheese or more gravy. Always more gravy. Let me know what you think about this one. The middle can be stuffed with anything you want. Toss some pie up in there too???? Go Blue!

These are even more appropriate now that the overlords have voted for the "other" fatties.

I'm doing the breakfast one and I'm wrapping that in a bacon weave. Never tried it that way, hope it turns out well.
