With the holiday season winding down and family members pushing every last button, I find myself hiding out on the back patio with cigars, booze and bbq.  It’s one of the only things that completely relaxes me as of late. Fortunately for me, my back patio is covered with grills, smokers and pizza ovens. Over the last month, I have had some fun with beef and booze and want to pass some of it along. This pulled beef recipe couldn’t be any easier and the booze it simple too.  Give them a try and let me know what you think.

  • Chuck Roast - 3 to 5 lbs

I don’t know about you, but I am full of ham and turkey and stuffing and a few other tasty Turkey Day treats. I am already looking forward to the weekend and tossing some protein on the pit. Sure, I could make a few leftover sandwiches, but I’d prefer to stir the coals a little and get some smoke rollin’. I have been wanting to try this recipe for awhile and figured this would be a great time to try it. This time of the year, you will find pork loins on sale that will dare you to pass them up. I found pork loins on sale for .99 C a lb and walked out with a dozen or so. My freezer is a bit full at the moment. Toss on an addicting molasses glaze and we have a winner.

I like to kick back with a Lantana Carrot Sriracha Hummus while this is on the smoke and dip with leftover veggies. I tried these “veggie" things on Thanksgiving and they are not half bad.

Ingredients:

  • Pork Loin
  • Favorite Rub - (I like something sweet on pork)
  • Molasses Glaze
  • 1 cup Molasses
  • 1/4 cup Dijon Mustard
  • 1/2 finely chopped shallot
  • 1 TBS freshly ground pepper
  • 1/4 cup OJ

I love a good dessert that can be cooked on the grill. I really love desserts that are super easy and a bit messy. This one hits all the buttons for me and is always a favorite at tailgates. If you have kiddos, this is the perfect dessert to get them involved in the cooking process. The banana boats only have 4 ingredients and come complete with their own serving dish.

I've been wanting to try this recipe for several years but never got around to it. After making an XL batch of these tasty treats, I am mad at myself for waiting so long. The original recipe can be found on the Kings Hawaiian site and is a classic. Since I had some leftovers taking up space in my fridge, I had to make these my own. I love a great CUBAN sandwich and even made one a few seasons back (Link Here) so why not go Cuban Hawaiian on this one. It’s a messy and tasty batch of yummy finger & knife & fork kinda food.

Ingredients:

  • 24 Kings Hawaiian Rolls
  • 1 lb of deli ham
  • Leftover pulled pork
  • Dill pickles
  • 8 slices of Swiss Cheese
  • Mayo
  • Hot Dog Mustard
  • 2 TBS Dijon Mustard
  • 1/2 cup Butter
  • 1 TSP Worcestershire Sauce

A few months back, I was offered a new job that I couldn’t pass up. My weekend hobby has turned into a full time job for the largest BBQ retail store in the US. I organize and teach BBQ classes every Saturday with some of the greatest pit masters and chefs in the country. It is a dream come true and I couldn’t be happier. I am constantly amazed with new recipes and techniques and how these guys make it look so easy.

In our most recent class, Chris Gentry of Gentry’s BBQ was in town and taught a great class. He did a CUBAN Pork Loin, smoked chicken and my new favorite dessert. He made Pumpkin Chocolate Chip cookies that blew me away. Not only were they ridiculously tasty, but they were the easiest thing I have ever cooked. 3 ingredient cookies on the grill….YES PLEASE. You can make these on the grill or in the oven. Trust me, these pillows of goodness will be a hit at your next holiday gathering.

Let me start by saying that I learned a very valuable lesson this week. It’s one that I feel I need to pass along so others can benefit from my mistake. If you or anyone you know suffers from this epidemic, just know that it’s curable. I was guilty of PWI. That’s Pinterest While Intoxicated. PWI will lead you down an UGLY path of holiday projects from which there is NO escape. The only way out is to hand over your man card and turn on the grill. Or oven in this case. This one was kinda fun and turned out some tasty poppers. Make these ahead of time and take them to your Halloween party and throw them in the oven. Your friends will dig em.

I love an easy appetizer recipe especially when bacon is involved. Toss in some cheese, jalapeños and brown sugar and I’m hooked. This one is super easy and can be changed to to fit your taste buds. I’ve made these a few times and they always disappear quicker than an ice cold barley pop after eating some Lantana Extra Spicy 3 Pepper hummus. (My favorite) They go fast is what I’m saying’.

I have moved on from my obsession with pork bellies and gone ALL IN on the St. Louis classic, the PORK STEAK. Not that I don’t enjoy a good pork belly burnt end or pork belly braid every once and awhile, but I am officially on the PORK STEAK express. This is a staple in the St. Louis area and huge in the midwest. We just recently started getting pork steaks in at my local grocery store and butcher shop.

A pork steak is basically a steak cut from the shoulder of the pig. They are commonly referred to as a pork blade steak as well. If your butcher does not carry them, but carries bone-in pork shoulder or butts, he can cut them for you. Think of a bone-in pork butt sliced into 1 inch thick steaks leaving a little bone in each steak. These will be slow smoked to render some fat and finished over high heat to add some sweet an sticky BBQ goodness. You will love these, I promise!

Over the last few weeks, I have been going back and forth on which recipe to use for this game. Obviously, it’s a HUGE rivalry game and deserves something a little special. More importantly, its a night game. This means more tailgate time for everyone. More tailgate time equals more barley pop time and longer cook times. Should we go with a 14 hours brisket? Already done last year. How about a 12 hour pork butt? Crap, did that a few seasons back.

I seriously lost sleep last week worrying about this weeks cook. That was until I visited my buddy Matt, AKA….Meat Church at his BBQ palace in Waxahachie TX. He was preparing for a BBQ demo in Dallas the next day and asked us if we wanted to try some Chuck Eye Roll. Duh, of course we did. We needed to add some protein to the barley and hops that were going down so smooth. After devouring a few chunks of this BBQ perfection, I knew this was it. This cut is known as a "cheap mans ribeye”. When cut into steaks, it’s very similar. When left whole, I would be happy to smoke and slice just like a prime rib. It’s that good.

Ingredients:

  • Salt and Pepper or your favorite rub

I am a believer that the GOOEYER the dip, the better.  I also love me some salty goodness on crunchy bread whenever its an option.  This is why is love the SIZZLING FETA appetizer is perfect on GAME DAY.  I need to give full credit to my man Big Green Craig for this recipe.  Craig is the captain of our 2 time defending Eggfest National Championship winning team and the genius behind this gooey and cheesy creation.  He has a great site with plenty of fantastic recipes at www.biggreencraig.com.  Check it out. This dip also pairs well with a few tubs of your favorite Lantana Hummus and some charred baguette pieces. Take them both to your favorite tailgate and your job is done!

This is the easiest recipe we have done in 4 years of MGOBBQ.  You can purchase the ingredients at your local grocer and have in the oven or on your grill in less than 2 minutes. If you want to make your own pesto, the recipe is listed below.

INGREDIENTS:

  • 16 oz Feta Cheese
  • 8 Sun Dried Tomatoes
  • Baguette (Toasted)
  • PESTO - Mix in food processor or blender until smooth.
  • 2 garlic gloves - Chopped
  • 1.5 cups fresh basil Leaves
  • 1 OZ Parm Cheese - Grated
  • 1/4 cup Pine Nuts
  • 1/4 cup Extra Virgin Olive Oil
  • Salt and Pepper to taste
