Not a good draw—Oklahoma State was seeded way—however Beilein might be the exact kind of coach that Cowboy shtick doesn’t work against. If they’re hitting from 30 feet or Michigan’s not hitting their open threes, it’s tip your cap time. Louisville is some big scary blocky dudes who don’t score enough to be terrifying. Kansas is the 1 seed you want in your region.

You mention that other site Bartovik or whatever. If you take UM since the Ohio St loss, UM is the number 4 team in the nation with the number 2 offense (0.1 behind Okie St) and the number 26 adjusted defense. So yeah...keep that up they could definitely make a good run in the tourney.

Maybe it's just the podcasting software I'm using, but Brian (I think) is cut off in mid sentence just after the closing music cue has started and there's just silence -- my software thinks there's a minute left, but there's nothing there at all.

Missing just the last minute is about a best possible scenario for something going wrong, mind you.

I got a kick out of that too.  And from reading all of the people freaking out about what he said -- like you have to be inducted into some secret order of BBQ to be able to cook meat at a high level of quality.  If you know what you're doing, and have the right equipment you can cook almost anything at a high level.  Now you might not be able to replicate the type of great BBQ at Franklin's or the Pecan Lodge or any other BBQ mecca due to lack of equipment/secret combo of spices, but can you get 80-90% of the way there?  Hell yes.  And that will still be some damn tasty food.

Its not like BBQ is like molecular gastromomy.  Its good meat, seasoning, and time.  Not hard.

Please don't brine your brisket people.  I mean yes do brine the hell out of your brisket if you'd like to have amazing corned beef.  If you're making corned beef, go with god, and 5 days of brining (which I guess if curing techincally).  

However; as mentioned above, and I can't stress this enough, if you're smoking brisket you don't brine.  You do rub, and make sure that rubs got a good amount of salt, and make sure that rub stays on for a while prior to the smoking process.  

I'm so sorry I can't help myself when it comes to BBQ.  I have a real problem and I need help.

I was at Franklin's BBQ in Austin last November because why the hell not - by coincidence there was another M grad and MGoBlogger in line behind me.  If you're at all familiar with Austin, Texas you'll probably know that Franklin's is a very famous local treasure  whose lore has eclipsed the city limits, a la Zingerman's, and that the wait line is 2 hours plus.

And you know what?  The BBQ there was good.  But I can't really say it was 2 hours wait good.

I was lucky enough to get Franklin BBQ without waiting in line as they came to Chicago for a weekend popup over 4th of July last year. It was pricey (though the ticket included open bar for 3 hours), but it was delicious. No sauce needed. 

I think my favorite responses to Brian were mostly people from the south saying "you think barbecue is a verb" type things.
