OT... Best 4th of July food you had

Submitted by dRich on
What are your/your significant others go to recipes for get together like this weekend... What are some of the best dishes you had and HAVE to try making your self? My dish this weekend was Greek Chicken Pitas... I use a family recipe that's close to most online recipes...it's the yogurt dipping sauce I'm not aloud to share. Haha Although in a pinch you could use Cucumber Ranch dressing. My Lady made bacon wrapped shrimp with a pineapple chunk in the middle. Easy to do... Wedge pineapple in shrimp... Wrap a slice of bacon around it to hold pineapple in. Pan fry. Toothpicks. Boom.

I'm a huge bacon fan. HOWEVA, I'm generally not a huge fan of bacon wrapped foodstuffs (i.e. water chestnuts, shrimp, asparagus, etc) since it seems that some of the bacon, if not all of it, is flabby when it's cooked that way. It's just really hard to grill or cook bacon that's wrapped around something AND get it all crispy a la cooking it normally on a flattop.

Anyone else with me?

That's my ladies specialty not mine. I just eat the shit out of them, I stay clear of the kitchen and watch over the grill.

I made a few racks of baby back ribs on my smoker. They came out insanely good, if I do say so myself. A close second was the skirt steak that I grilled in my homemade marinade.

'Made New York strip steaks cooked over hickory wood and eggs scrambled with sharp cheddar cheese. 'Breakfast cocktails too..

Then threw some boneless, skinless chicken breasts on to have them waiting for lunch (secret to perfect chicken breasts is internal temp of 160 degrees)..

Yes, Redamaks are good I grew up in New Buffalo, worked at Redamaks in 73-74 cooking up those Burgers. Next best thing is Inn-N-Out which is what I had for Lunch on the 4th with my Son and Daughter, and then later lots of Different Asian food at Santa Anita Race Track at the 626 Nightmarket.

Not traditional 4th of July fare, but my wife and I had amazing Chinese food last night. We had dinner at some friends' apartment; the wife is Chinese (parents even own a couple of Chinese restraurants), plus the wife of the other couple who were invited over is Chinese and brought her parents along. Tons of great homemade noodles, stuffed buns, dumplings, etc. Even had some good pigs' hooves and duck stomaches.

Chicken marinated in Speide Buffalso sauce from upstate NY, home-made crock-pot mac n cheese, chicken-sausage stuffed with gouda, strawberry spinach salad with almonds and a balsamic vinaigrette, strawberry pretzel salad and some fantastic sangria my wife made a couple days ago. It was awesome.

Blueberry and cherry brats from Howard's Meats in Lambertville, MI. Great brats there - apple, peach, chicken feta and spinach, jalepeno cheddar. Tons of good choices.

In Meijer's at their meat counter they sell 1/4 lb seasoned pub patties. They are awesome! We got steak seasoned this time and had homemade Mac and Cheese courtesy of Nana. For dessert it was chocolate coca cola cake which is a cross between cake, brownie, and Texas sheet cake.

Last night before watching the fireworks. Smoked 25 lbs of sockeye on Friday so we had a little of that as an appetizer. Vodka tonics.

Bacon-wrapped Jalapeno Bratwurst.  Not just any bacon, not just any brats, but bacon and brats from a meat market called Richland Meat Center.  I found out about the bratwurst there a couple football seasons ago when a buddy brought some for our tailgate at AAGO, their brats are about the best I've ever had.  That's my go-to meat market for special occasions and tailgating now; besides the jalapeno brats, they have at least a dozen other flavors, such as chedder, blueberry, pineapple, apple, and many, many others (and other kinds of sausages and steaks and lots of MEAT).  Biggest problem is that the place is 50 miles away from here, so I usually make a stop when in the Kalamazoo area for other reasons.
