Can my work Determine if I'm watching the tourney from their IT logs? My guess is yes, but is that only if they look into it, or can/ is it likely they can get an email saying that persons x, y, and z are watching the NCAA tourney at work during work hours?

My friend worked at a company that logged whenever he would leave his desk to use the bathroom. And if he was away from his desk more than 10 min an email would be sent to his manager.
I think companies are required to let you know if that kind of monitoring/reporting is being done.
