I've become a big fan of brining. It keeps the CHICKEN juicy while at the same time adding good flavor to your CHICKEN.
I'm having the fellas over to watch the game and only one thing on the menu.
CHICKEN.

We're doing chicken marsala with orzo over here, along with an attempt at roasted figs stuffed with goat cheese. It seemed only appropriate.

My wife is making her insanely good beef mini-empenedas. Basically, ground beef cooked up with tomato paste, cut up onions and tons of spices. Each spoonful of beef is then wrapped in a pastry of some kind. Amazing game food. For dessert, fresh baked "crunchy-jumble" cookies (chocolate chip cookie base mixed with chocolate chunks and Rice Krispies). And some Cabernet to go with the meal.

I was going to prepare some BBQ to take to my buddy's house in NJ but my fiance is running late. Not sure what time we will get there.
