I found this quite amusing. If you don't know what Pokemom are, I'm sure this is less funny, but the descriptions of the teams are still spot on.
Michigan got Jynx, MSU tauros, and OSU Machamp.

Eastern Michigan as Missingno is sad but brilliant. If you never played the original Pokemon, Missingno was a glitched Pokemon that would appear if you did a certain thing. It could get you unlimited items or crash/corrupt your game. Having it on your screen typically was not a good thing.

OSU should be Dragonite, probably the 2nd best Pokemon behind Mewtwo (in the original games, not the cards)
Michigan should be Arcanine, Ninetails, or one of the legendary three birds (Articuno, Moltres, Zapdos) not fucking Jynx

Eastern Michigan: MISSINGNO, the glitch Pokemon. If Eastern Michigan is on your screen, something went horribly wrong.
I had to ask my daughter what a lot of these were - she's the Pokemon expert and this show came to the US quite after my time so I really only know as much as others have told me about Pokemon over the years. That is pretty accurate when it comes to Eastern Michigan though.
Also, for some reason I found San Diego State's funny too:
San Diego State: SDSU is Pidgey, a perfectly chill Pokemon whose most famous attack is literally just kicking sand, which seems like something you could do in San Diego.

One of the authors is an editor at Land Grant Holy Land. Pretty sure that's why we have the weird one and they attempt to make Harbaugh's recruiting seem weird and awekward.
I do appreciate the self-depracation for the OSU one though, giving them a powerful one but the douchiest bro of all.
