This is one of my favorite appetizers and always gets requested on Super Bowl Sunday. For those doing the low carb thing, this is the app for you. It's also extremely versatile as any good BBQ meat can be substituted if you don't like shrimp. Pulled pork, brisket, and even spam bites have made into the avocado boats and all have been winners. Go crazy!

INGREDIENTS:

  • 8 Whole Avocados (Will make 16 Boats)
  • Olive Oil
  • Stubb’s Bar-B-Q Spice Rub
  • 1 lb Shrimp (Peeled and Deveined) or leftover pulled pork / brisket
  • 16 oz Colby Jack Cheese
  • 8 pieces of bacon. (Cooked crispy and chopped into bacon bits)

DIRECTIONS:

Set up grill for medium, direct heat.

Slice avocados in half and remove the pit. Make a few deep cuts inside the avocado, but not thru the skin. Create a cross hatch in the meat of the avocado. Lightly coat the inside of the avocado with olive oil and sprinkle with Bar-B-Q Spice Rub.

Sprinkle a little rub on your shrimp and toss on the grill for 2 minutes a side. If you are using leftover meats, no need to heat them up. Remove shrimp from grill and chop into pieces. Set aside. I forgot to take pics of the shrimp. It may have been because I ate half of them before they made it to the cutting board. Chef's privilege, right?

Grill avocado’s on medium heat, flat side down. Grill for about 5 minutes or until you have a nice char on the inside of the avocado.

Once the avocado is charred, flip over and fill with shrimp/pork/brisket and cheese. Cook covered for approximately 5 minutes or until the cheese is melted.

Add crispy bacon to melted cheese. The melted cheese helps hold the bacon in place. Remove from grill and serve HOT.

Not important but I noticed that the cooking grates have different thicknesses in 2 of the pictures. 

Those look amazing! Can't wait to get outside and grill again.

We'll be picking up the ingredients on Saturday.  She's on a low carb kick so these will go good with the pizza and wings we've already got planned.

that eating warm avocados is good. whenever I get a sandwich thats been heated and then they put avocado on it, once the avocado absorbs the heat, I find it to be far less palatable. That said, the addition of shrimp, bacon, cheese, and bbq rub would make many foods taste better

It's really the smokiness when you grill or even oven bake the avocados that is the attraction. One thing my wife does is crack an egg into half an avocado (yolk on one half, egg white on the other half) and pop it into the toaster oven. Avocado gets smoky, yolk gets runny, and white is almost a poached texture. I hate avocado and I love this.

This recipe sounds like a winner to me!

Nice......noew if i can get my grill out of the 30 plus inches of snow we just received ...with another foot coming before gametime..........

 

So I suppose you use a spoon and dig it out......

i went to on the border and ordered their avocado fries as an app. They looked and sounded delicious. After putting a few away, i came to the realization that they were horrible! Now any time i see a cooked avocado, i think how horrible it would taste!

Seriously. I've got a pretty significant man crush going. Nice digs; I like your patio. By the way, avocados are great cold. They're also great warm. They're equally fantastic piping hot. You're just plain wrong if you disagree with me.
